Lapsang Souchong Simple Syrup

Simple syrup infused with lapsang souchong. I love pairing it with mezcal, but it's very versatile.
Ingredients
3 items1 cuploose lapsang souchong tea
4 cupswater
equal volumegranulated white sugar(roughly 3-4 cups; measured after straining)
Method

Bring the water to a gentle simmer in a medium saucepan; don't let it reach a rolling boil.

Add the tea and steep for 10 minutes, stirring occasionally.

Strain through a fine mesh strainer into a large measuring cup. Note the volume of the liquid.

Return the strained tea to the saucepan over low heat. Add an equal volume of sugar (1:1 ratio) and stir until fully dissolved.

Remove from heat and let cool, then bottle and refrigerate. Keeps for up to 2 weeks.
